Meet The Bistro Team
Beth Grimm
Growing up, Beth Grimm's late mother often hosted elaborate dinner parties for friends and family, modeling not just a love of food but hospitality. Beth's passion for coffee began in Minneapolis while managing a Dunn Brothers coffeeshop, learning more while packaging coffee at a local roasting facility, and later honing her expertise managing Caribou Coffee's corporate location. When Beth moved back to Iowa to support her mom, the community approached her and her husband, Adam, about opening a local coffee shop. A year later they introduced The Lantern Coffeehouse & Roastery in Sibley, Iowa, which now runs 14 years later as a nonprofit and a blessing to the community. Now in Ames, raising their three children and continuing to follow their passions, Beth has worked at Morning Bell Coffee Roasters and Burgies Coffee North. As Bistro Manager, Beth looks forward to meeting new faces and welcoming everyone to the Sixty Forward Center.
Michelle Miller
The Bistro Chef Michelle Miller grew up in Cambridge, Iowa, and attended culinary school in Ankeny at the Iowa Culinary Institute. Since then, she’s honed her culinary craft across Iowa restaurants and eateries, from Hotel Pattee to Wheatsfield Cooperative, serving as pastry chef, banquet chef, deli manager and bakery lead. Chef Miller has a strong appreciation for quality ingredients in helping to make a dish. She’s learned good customer service is kindness. And she believes great teamwork is worth its weight in gold, and she’s honored to be part of The Bistro team nourishing the Ames 60+ community.
Jeff Welder
Born and raised in Madrid, Iowa, Chef Jeff Welder cultivated a love for good food. He trained in the DMACC Culinary Arts program in Ankeny and the Culinary Institute of America in Hyde Park, New York. With extensive experience at various Des Moines kitchens — from Wakonda Club and Hyperion Field Club to Metz Restaurant and ISU Dining — Chef Jeff is excited to bring a winning blend of delicious and nourishing food to the Sixty Forward community. Even at home, with his wife USDA scientist Dr. Jennifer Wilson-Welder and their two rescue bunnies Enrico Fermi and Isaac Newton, Chef Jeff continues to refine and elevate his passion for enjoying and sharing a good meal with others.
